Saj is a traditional Azerbaijani cookware of a special shape, designed for cooking over an open fire. Thanks to heavy cast iron, it heats evenly and retains heat for a long time, while the convenient side handles make it easy to use.
In its classic form, saj is used for frying meat, fish, and vegetables. When turned upside down, with the convex side up, it can also be used for baking flatbreads or lavash.
This versatile cookware is suitable both for outdoor cooking — on a grill, campfire, or hearth — and for indoor use on a stovetop.

How to Prepare Cast Iron Cookware for Use
To get your cast iron cookware ready for use, you need to follow a few simple steps. The result will be a reliable kitchen companion that will serve you for many years. Cast iron is a porous material, so to prevent food from sticking and to ensure comfortable cooking, it’s important to create a protective layer that will improve with each use.
Tip: First, turn on your ventilation hood or open a window.
Washing: Start by thoroughly washing the cookware.
Drying: Then dry it over heat and add a small amount of salt.
Stirring: Stir the salt until it turns dark. Continue this process for about 10 minutes. Replace the salt with fresh if necessary.
Removing Salt: Carefully discard the salt (remember, it’s hot!). Then rinse the cookware with hot water — cast iron does not tolerate sudden temperature changes.
The next step is to apply a thin layer of oil and heat the cookware either in the oven at maximum temperature or directly over an open flame. The thin layer of oil will transform into a film that acts as a natural non-stick coating. Repeat this process several times, making sure the surface is not sticky. If it is still sticky, heat it a bit more before applying the next layer of oil.
Now your cast iron cookware is ready to use!
Caring for Cast Iron Cookware
Cleaning: Wash the cookware thoroughly after each use. It is recommended to use baking soda and a regular sponge.
Drying: Never leave the cookware wet — water is the natural enemy of cast iron.
Oiling: After washing, always dry the cookware and apply a thin layer of oil.
Regular Use: The more often you cook in your cast iron cookware, the better it becomes with time.
Do Not Store Food: Avoid leaving food in the cookware for a long time, as it may cause oxidation.
If rust appears on the surface, don’t worry. Simply scrub it with a sponge and re-season with oil over heat.
